North India: Dairy products like ghee (clarified butter), yogurt, and paneer (Indian cheese) are widely used. Wheat-based naan (flatbread) and poultry are common.

Mix all marinade ingredients and coat the chicken. Let it marinate for at least 30 minutes (ideally 2–3 hours). Bake the marinated chicken at 200°C (top/bottom heat) or 180°C (fan) for 20–25 minutes until golden.
To prepare the sauce: Sauté onions in butter until translucent. Add garlic, ginger, and pureed tomatoes, simmer for 5–10 minutes. Stir in spices and sugar. Add the baked chicken to the sauce and simmer for another 10 minutes. Stir in the cream and cook for another 2–3 minutes. Serve with naan or rice.

Heat oil and roast cumin. Sauté onion and ginger. Add tomatoes and spices, cook for 5 minutes. Add potatoes and cauliflower, along with half a cup of water. Cover and simmer for 20 minutes until vegetables are tender. Serve with naan or rice.
